These Seasonal Recipe dishes may be produced using local fruit, vegetables and other produce as they naturally become ready to eat or 'come into season'.
A Seasonal Recipe might, for example, use strawberries in summer and apples in autumn when these fruits are naturally ripe if they are grown in the UK.
Evidence suggests that both nutritional and environmental benefits accrue from using seasonal ingredients. Locally grown produce is often fresher and, as it has not been transported far, less pollution is caused by lorries or planes.
